This is actually a pipetting device used in laboratories. However we have found it is perfect for making large quantities of 'caviar' spherifications.
The multi-pipette is made from autoclavable polycarbonate - although you are unlikely to have an autoclave! The multi-pipette should be cleaned immediately after use to prevent hard deposits forming inside the pipettes. We recommend hand-washing by squirting hot water with a 'Miltons' solution or other baby bottle cleaner through a clean syringe into the multi-pipette 4 or 5 times. Then wash unit under hot running tap with soapy water. Finally rinse the multi-pipette using clean hot water from a clean syringe.
To prepare sodium alginate to make spherifications you must refer to instructions either on the alginate packet or on www.experimentalkitchen.co.uk. Once your ingredients are ready draw the food liquid into the syringe. Attach hose to multi-pipette and syringe. Place multi-pipette over water-bath and inject multi-pipette with ingredients - ensure drops are given time to form into spheres in the water bath before allowing more drops out of the pipettes.
Use a straining spoon to collect the spheres and wash them in a second bath if necessary to stop further gelling.
