Glutinous rice flour (also known as sweet flour or waxy rice flour) is frequently used in Asian recipes to thicken sauces or bind ingredients. This flour is known for its ability to absorb liquid, and is very easily digested, this makes it popular when making dishes for the very young or elderly.
This flour is made by crushing and processing whole grains of rice until they have reached the required consistency of a fine powder. As this flour contains no wheat it can be used by those who follow a gluten free diet. Alongside its ability to absorb liquid it also retains it particularly well making it ideal for dishes that are to be frozen (freezing and defrosting results in some loss of moisture).
Please be aware that you should not simply substitute this type of flour for another as their properties when mixed with other ingredients are quite different, don't let this limit you however as rice flour is used in a great many recipes, the most common in Asian culture being rice cakes which play an important role at major celebrations, such as new year etc.
